Granola, or granola bars (Perfect replacement for sugary cereals)




Ingredients:
4 cups old fashioned rolled oats
1/3 cup coconut oil
3/4 cup raw honey
4 tsp vanilla extract
1/4 tsp salt
1/8 tsp cinnamon
Add Ins:
Chopped almonds, Walnuts, Pecans, Coconut, Sunflower seeds, Pumpkin seeds, Dried fruit, or anything else that strikes your fancy.

Directions:
Preheat oven to 350. Place oats on a parchment lined baking sheet and toast for 10 minutes stirring the oats every few minutes.
While the oats are toasting, melt honey and coconut oil together in a large saucepan over med- low heat. Careful not to burn it!! Remove from heat and mix in vanilla, salt, and cinnamon. Add toasted oats to the saucepan and stir until everything is combined. Add whichever add ins you choose. 
Put mixture on a 10″ x 15 ” (Or bigger if you add more. I usually end up with a 9x13) parchement lined baking sheet. Press the mix down with a spatula so that it covers the whole sheet and is tightly mashed together. Bake at 350 for about 10 minutes or until the edges start to turn brown. Bars will be soft and gooey but they will come together as they cool. Set them aside for about an hour and then cut into granola bars, or break up into granola!
